If you see it spelled with "ae" instead of "ä" on other platforms, it's because sometimes umlauts don't get accepted as characters for Discord usernames or email adresses. And that's sad but understandable. The "ae" ("ue" and "oe" aswell) trick of german language was made for that purpose. If you see a "e" letter after an umlautable (I made this word up, if you ask) vowel, it's meant to have an umlaut on it instead of a "e".
